My neighbor took me to lunch, and we headed to a great

steak with my meal, but it came with chicken instead.
Oh boy, the chicken was excellent!! Shrimp was also
an option for this dish. Served with Spanish rice
and queso fresco melted cheese.

I wish there was a decent Tex-Mex restaurant nearby. There is a restaurant a short walk from my office but it's the same old boring fare. A few steps up from Taco Bell, mind you, but still not great. I'm not one to complain about salt but their food is very salty. They do make an excellent cheese dip using queso fresco. :)
I think I'll skip lunch today to bring my blood sugar down. The current negotiations are improved with every low blood sugar recorded. I had 1 coffee w/ cream for breakfast.I was stuffed so no supper tonight.Yep, sometimes lunch is my biggest meal of the day.
