It's going to fire roasted tomato soup here. I'm
anxious to see if it's going to be better than my
favorite whole tomato recipe blended with a stick
blender after simmering. Ingredients are the same,
with the tomatoes being the only difference and
there's just enough heavy cream left to make it
super rich.

Title: Xxcarol's Mediterranean Chicken Tomato soup

16 oz Can diced tomatoes
28 oz Can Tomato Puree
16 oz Can Corn
16 oz Can Cannellini beans
16 oz Can red kidney beans
32 oz Chicken broth
1 tb Dried basil
1/2 tb Dried thyme
1 ts Cumin
1/2 tb Black pepper
2 c Diced cooked chicken
1/2 tb Olive oil
I've been doing a lot of heart healthy cooking lately and this is a
perfect sample!
To assemble this is simple. Open cans, add to pot. Do not drain or
rinse. Add chicken, broth, spices and olive oil.
Simmer on the stove to let the flavors meld for about 1 hour. It can
be less but will taste better with the longer simmer.
It's important here to check cans for sodium content and select lower
ones. They may not be marked 'low sodium' and in fact most aren't
listed as that.
The closer to name brand, the more salt in them. Avoid Hunts, Heinz,
and Contadina unless they have come up with a heart healthy version
that actually IS heart healthy. I used Tuttorossa tomato puree at
15mg per 1/4 cup. In fact, the only item in here that was high, was
the chicken at 176mg sodium for 2 cups, but that was split into 10
cups so each cup so 17mg per serving. What I ended up with was
approximately 35mg mg total per cup.
