This was tailored to Don's needs which is easy to digest and not tooMy daughter has been making a baked rice dish with salmon and imitation
spicy. Feel free to add other sauces if you like but the simple
butter, sesame oil, and garlic powder did the trick.
>
5 sticks of imitation lobster*
1 TBSP butter
1/2 TBSP sesame oil
1/2 cup orange bell pepper
1/2 cup red bell pepper
1/2 cup sliced cremeni mushrooms
1/4 tsp fine garlic powder
Rice for plating

Slice bell peppers to slivers then toss them and the mushrooms in the
sesame oil. Add butter to pan and sprinkle garlic in it as it melts.
Add all but 'lobster and stir fry about 3 minutes. Pust stir fry to
side and add 'lobster' sticks (cut in 1/2 or 1/3rds if desired) to heat
(add a little more butter if needed), turning at least once.

Plate rice then add stir fry medley and top with 'lobster'.

* recipe uses 2.5 sticks per person but 2 would be fine. The packs I
get are often on sale for 1.99 and have 8 sticks so, 4 servings. We
just like more!

If curious, this meal assembles for 2 adults and can easily be expanded
(I used 5 of the 8 sticks of fake lobster). Rule of thumb is 1 cup
rice, 1 cup stir fry, and 2.5 sticks of fake lobster per person. This
can be totally heart healthy if you use 'I can't believe it's not
butter' instead of real butter. Oddly, not that much taste difference
with this recipe!

Cost if wondering: 1.74 per serving or near it. You could also do it
with seared scallops or peeled deveined shrimp. Costs a little more
that way but not that much.
