 I was going to leave it to my wife to decide what to do with the chicken. She decided to chop it up and do it skewers, so that involve marinating it and putting the responsibility back on me.  I blanched some onion, red pepper, green pepper and onion  and assembled the skewers. When it came time to cook them she took over. She also made a nice salad.
  The skewered meat and vegetables turned out beautifully.
   

  To a restaurant to celebrate grand-daughter's b/day. I had duck breast,
delicious and tender, with risotto, also delicious, and kale which
confirmed that it should only be served to cattle.
