I decided against putting in the extra 30 gallon water tank, and instead opted for four 6 gallon jugs, and the one 7 gallon I already had to give me a total of 31 gallons we can easily take now. They all fit nicely under part of a couch area and are going to be inside the slide out area and not putting extra weight outside the frame once extended. That gives me a total of 61 gallons and I would think that should be plenty for going off grid for a while.
I didn't want to install my wiring harness until I got the parts for the baseplate so I didn't have to take the skid plate off twice. But, I'm going crazy waiting and going over and over it. I think I will just start at the back and route the wires up into the engine compartment and leave them coiled up in there until I get the baseplate. At least I can get the tail light diodes all installed and checked and have one less thing to do later.
